Our main dough recipe is a traditional Neopolitan one using high hydration with flour, water, yeast, & salt which is proofed for over 48 hours.  It produces the unique flavor that compels our great reviews. We use the highest quality California whole peeled tomato on the market, Grated Parmesan Cheese, & Award Winning Cuputo Brand Fresh Mozzerella made from Wiscon Milk by Wiscon Corp in Melrose Park, Illinois.  Combined with the magic that happens in our Forno Brovo Wood Fired Oven we believe, and many agree, it is a winning combination.

As soon as your hand crafted pizza is placed into our wood fired oven at 750 to 850 degrees, it is destined for greatness and 2 minutes later it is in your hands and ready to enjoy.

The Boss

Giuseppe developed most of his flavor profiles by starting at Frankies Deli in Yorktown Mall in Lombard, Illinois and The Flagstaff House Restaurant in Boulder, Colorado before trying his hand at Food Distribution. With every new move he made away from the food  service industry, it brought him closer to realizing his original and true passion.... making delicious food.
